Garlic Parmesan Fettuccini

I found this recipe on Pinterest and now I can’t stop making it! It’s scrumptious! And pretty easy so win-win. Give it a try; you may even have all the ingredients already!

8 oz Fettuccini (1/2 a box)
2 Cups Chicken Broth
1 Cup Milk
Salt & Pepper (optional)
1 Tablespoon Olive Oil
4 teaspoons Minced Garlic
2 Tablespoons Butter
1/4 Cup Parmesan Cheese
2 Tablespoons Parsley (optional)

** Pro Tip: Measure ingredients out ahead of time (learned this the hard way). **

– In a large skillet, heat the olive oil on medium heat.
– Add minced garlic and stir constantly for 1-2 minutes.
(The recipe I pinned says “until fragrant”.)
– Stir in milk, chicken broth, butter, and fettuccini.
– Optionally, season with salt and pepper to taste.
– Bring to a boil, reduce heat and simmer for about 18 minutes, stirring occasionally.
– Stir in parmesan cheese.
– Stir in parsley (optional).  I do this after I’ve scooped out my kids’ portions.  Green flakes freak them out, haha.

** This was just enough food for my family of 4.  We did not have leftovers.  So if you have a bigger family, double the recipe (I can’t vouch for this as I haven’t tried it).

If you try it, let me know how it tastes!!
