Easy Chicken Pot Pie… Mmm so good!

When you think about it, pancake mix, mixed veggies, and cream of chicken soup might sound like they shouldn’t go together.  But THEY DO!  And sooo well.  I never thought I would like Chicken Pot Pie, but this is just incredible!!

My friend Maggie (Cupcakes’ godmother) came over this past weekend and together we made a Chicken Pot Pie recipe she found on Betty Crocker’s website.  It was SO delicious!!  I *had* to share it with my lovely readers so here you go…

Ingredients

* 1 Cup Bisquik – Original Pancake / Baking Mix
* 1 Can Cream of Chicken Soup
* 1 Cup Mixed Veggies
* 1 Cup Cooked & Cubed Chicken (I poached 3 chicken tenderloins)
* 1/2 Cup Milk
* 1 Egg

How to Make Chicken Pot Pie

Preheat the oven to 400 degrees.

In a square casserole dish (ungreased), mix Cream of Chicken soup, Cubed Chicken, and Mixed Vegetables.

Mix egg, milk, and bisquik.  Add the bisquik mixture to the top of the soup mixture in the dish.

Place dish in oven, and cook for 30 minutes or until golden.

  1. Have you ever had a Homestyle Bake? There’s a version of it that’s basically this, but it’s actual biscuits on the top. I made my own version in pretty much the same way you just did, but I actually made the drop biscuits by following the recipe on the Bisquik box. This version you posted actually looks easier. We LOVE chicken pot pie in this house–it is sooooo good!
