How to Do Taco Night with a Toddler

Taco Night is the best!  It’s easy and tacos as well as all their variations are delicious.  I have found however, that since tacos are so messy and all the ingredients inside tend to fall out unless you hold it just right.  That makes it very difficult for a toddler to eat them.  So I’ve come up with a way to make it work and Cupcakes LOVES it!

Step 1: Brown the Beef

or Turkey (1 lb)… I heard using ground turkey is healthier.

Step 2: Taco Seasoning

Add 2 Tablespoons of Taco Seasoning.  I recommend making your own.  It’s super easy and is much cheaper than buying a packet every time you want to eat tacos for $0.75 – $1.50 a piece!  Also add 1/3 cup of water and heat on medium for a few minutes – mix everything together.

I love it because it tastes the same, is probably a lot healthier for you, and you can keep it in your freezer – because you’ll have extra – for next time!

Step 3: Adult Tacos, Toddler Tacos

[They’re still pretty much the same; but the Toddler Tacos stay together better]

You’ll use most of the meat for your Adult Tacos so separate some out for your toddler(s).

Adult Tacos: flour or corn tortillas, taco meat (beef or turkey with the taco seasoning added), salsa, onions, corn, lettuce, Mexican cheese <– obviously you can use your own favorite ingredients.  Roll it up like a burrito / taco and enjoy!

Toddler Tacos: Put a flour tortilla on a plate, distribute Mexican cheese, sprinkle taco meat and corn.  Put a second tortilla on top and microwave for 30 seconds or until cheese is melted and when it cools, it should stay together. (It’s pretty much just like a cheese quesadilla.)  Cut it into smallish triangles.

Also on her plate: some shredded lettuce, steamed corn, and there used to be blueberries.  She LOVED this meal and ate every bit of it!
